- Fruits are conical in shape and mature to pale red, despite the name. I think it was called 'yellow' because immature fruits are yellowish-green in color, and were probably picked and used at that stage. Ripe red fruits are quite sweet and crunchy, and make great paprika powder then dehydrated.
