B.C KO T

Large conical peppers up to 6-7" long and 1.5-2" in diameter. Only mildly spicy, this pepper has delicious sweet and almost smoky flavor. In our cool summer, we did not detect much heat in this pepper. Great for fresh eating or can be dried for the most flavorful and aromatic paprika.

History

  • A French Basque pepper. According to Wikipedia, this pepper is cultivated in the French commune of Espelette, Pyrénées-Atlantiques, traditionally the northern territory of the Basque people. It is a cornerstone of Basque cuisine, where it replaced black pepper.
  • First offered in the Seed Savers 1994 Yearbook by Bruno Ansker of Ergue-Gaberic, France (FRAN AN B).
